Snack : Appe

Serves: 4

Ingredients: 
1 bowl suji
1/2 cup curd well beaten
1 big onion & capsicum chopped finely
1 grated carrot
2 finely chopped green chillies
little coriander leaves
salt according to taste
red chilli

For filling:
chaat masala
1 potato boiled and mashed

Stand for making appe

Method:
1. Take suji in one big bowl and add curd and leave for 15 mins.
2. Add chopped onion & capsicum and grated carrot.
3. Add green chilli, coriander leaves, red chilli and salt at the last.
4. boil one potato and mash it and add salt, chilli and chaat masala in that.
5. Put appe stand on flame and grease with oil. pour little suji batter and then add little potato and again suji batter.
6. put some oil on the batter. once it is done from one side then change the side and cook.
7. Serve hot with green chutney or tomato sauce.

Modaks



Makes: 6-8 Modaks

Ingredients:
1 cup rice flour (chawal ka atta)
1 cup water
1 tsp oil
oil for greasing
a pinch of salt

For the filling
1 cup grated Jaggery (gur)
1 cup grated fresh coconut
1/2 tsp cardamom powder ( Ialchi powder)
8-10 Cahewnuts
8-10 raising
1 tsp khus khus
1 1/2 tbsp Ghee

Method
  1. In a pan boil the water. Add 1 teaspoon oil and a little salt in the boiling water and stir. Reduce the flame, add the rice flour and cover for five minutes.
  2. Fry 1tsp khus khus in a pan and keep aside.Cut cashewnuts and raisins also.
  3. For the filling, in a non-stick pan, add  jaggery and cook over a slow flame till the jaggery melts and then put fresh coconut. Fry for 2-3 mins till the mixture comes together
  4. Add cardamom powder, Khus khus and fry little then add cashewnuts and raisins fry for more two minutes then close the gas and take out filling in a bowl.
  5. Uncover the flour plate now and start making dough .Whisk well so that no lumps remain. Add little ghee and keep aside for 5 mins. Add little hot water only if needed.
  6. Make even size small balls of the dough  using oil. Then roll each of them into a round shape with hand.
  7. Add a spoonful of the filling into the dough.
  8. Make 8 to 10 folds in rolled dough making some distance in between. To make a fold pinch the outer line of dough and push each fold little inside to close it
  9. Bring all the ends together and press to seal with all the fingers. Prepare a steamer by adding water, a teaspoon of oil and heat it till the water comes to a boil. While the water is simmering, place the modaks on a greased steamer plate and steam for 6 to7 minutes.
  10. Once the modaks are cooked they will turn translucent. Serve hot drizzled with pure ghee
Note: Grease your palms with a little oil and knead the dough while it is still warm; if the dough cools it will get lumpy, if it is not kneaded.

Strawberry Almond Cake- Eggless

Preparation Time: 1 Hrs

Servings : Large Cake

Ingredients:
1 tin strawberry flavoured condensed milk ( milk maid)
1 and 1/4 Cups milk( Full Cream)
1 cup(150 gms) White unsalted Butter softened 
1/4 cup powdered sugar
2 cup(200gms) maida
1/2 cup cornflour
1tsp level soda bicarb
2tsp level baking powder
2 tsp vanilla essence
2-3 tsp cocoa powder
a big baking tin of diameter 10-11"

Topping:
15-20 almonds cut into long pieces
1/4 cup chopped walnuts
Strawberries cut into slices
1 tsp maida

Method:
1. Sift maida & corn flour with soda- bicarb & baking powder. Keep Aside.
2. Mix sugar and butter. Beat till very fluffy. Add milk maid. Beat well.
3. Add milk. Mix well. Add essence.
4. Add maida gradually beating well after each addition.
5. Beat well for 3-4 minutes till the mixture is smooth & light.( Soft dropping consistency)
6. Mix Almonds, walnuts and strawberries with 1 tsp maida to coat dry fruits.
7. Add half of the almonds mixture to the batter and mix well. Divide the mixture into two equal parts.
8. To one part, add 2-3tsp of cocoa powder. Add 1tsp milk. Mix well.
9. Grease and dust 2 loaf tins or a big cake tin.
10. Put spoonfulls of mixture alternatively in the tin.
11.Smoothen the top, pushing the mixture backwards from the centre to make a slight depression in the centre.
12. Sprinkle the left over almonds mixture on the cake to cover it well. Bake for 60 mins in pre heated oven at 150 degree C.

Icing:

Prep Time: 15 mins

Ingredients: 
200 gms Unsalted smoothened Butter
250 gms Icing sugar
2 tsp Hot Water
Almond Essence - 1tsp

Method :

1. Take butter in the bowl. Gradually beat in sifted icing sugar till mixture is light & fluffy.
2. Add hot water and almond essence and beat well.

Now Decorate the cake as per your choice.

Note: Put 1 tsp cocoa powder in mixture if you want.

Daal Makhani

Serves: 6

Ingredients :
1 cup urad saboot (whole black beans)
2 spoon channe ki daal (split gram daal)
2 whole dry red chilli- soaked in water for 10 mins
1 tsp ghee,
 5 cups water,
salt accroding to taste,
1" ginger
4 flakes garlic
4 tomatoes- pureed in grinder
2-3 tsp butter
1tsp kasoori methi and chopped coriander leaves
1/2 tsp garam masala
2 tsp tomato ketchup
1/2 cup milk
1/4 tsp grated jaiphal (nutmeg)

Recipe:
1. Grind ginger, garlic and dry red chilli together to paste.
2. Soak dals for atleast 2 hours in hot water. Clean, Wash Dals. Pressure cook both dals with 1tsp ghee, water, salt and ginger garlic chilli paste.
3. After the first whistle, keep on slow flame for approx 30 mins or take 5 whistles at least in medium flame.
4. Take oil in kadai and fry tomatoes until they leave kadai. Add butter, kasoori methi, garam masala, tomato ketchup. Simmer gas for 7-8 mins. Add some milk and add dal and keep mashing in between.
5. Add jaiphal. Remove from fire. sprinkle some chopped coriander & butter and serve with rice.
NOTE: we can add 1/2 cup fresh cream if required.

Kids Special Energy Drink- Beans Orange Shake

Today i bring something new on demand....Energy drink for the kids.

This drink is made up of beans and orange. Orange contains Vitamin C and Vitamin A.
Beans contains lot of fiber, potassium, protein and iron. If your child is doing so much activities and he is tired then this drink gives instant energy.  And last but not the least, it is tasty so your child takes it without any problem.My kid liked it too much. It does not have too much ingredients or it does not take too much time to make also.


Serves : 4

Ingredients:
Black Eyed Beans : half cup
Orange Juice : 8 Oranges
Sugar : 2 tsp

Method: 
1. Soak black eyed beans for 2 hours in hot water.
2. Then boil the beans properly and bring it to normal temperature.
3. Grind the beans in mixie with its water and make juice of it. Then strain it.
4. Make juice of 4 oranges.
5. Mix Bean Juice and orange juice together and add sugar & stir.
6. Pour in glass and its ready to serve.

Note: You can add both the juices according to your taste also.

Feni kheer

Happy Raksha Bandhan to All!!!

I know i m little late. its because of the time difference from india also. But anyways here we go:

On the occassion of Raksha Bandhan i want to share with you all a very simple, quick and easy recipe.
Kheer is the main sweet which people makes on Raksha Bandhan but instead of making rice kheer, we can make feni kheer which is quick n very easy to make.

So, Lets make our festival special...

Serves: 6

Ingredients: 
Feni - 200 gms
Milk - 1.25 kg
Sugar - 1/4 bowl small
cardamom - 4
almonds - 8
Pistachios- 10
kesar- 4-5 strands
Ghee- 2 big spoons

Method:
1. Take ghee in kadai and make little hot.
2. Put feni and fry til the color changes to light brown.
3. put milk and boil.Put cardamom and simmer the gas and boil for 15 mins and add sugar & stir.
4. Serve hot with almonds, pistachios and kesar strands.

Apple Banana Shrikhand

Serves: 6

Ingredients:
3 banana and 2 apple pulp (boiled in little half cup water and grinded)
1.5 cup of curd
1/2 cup sugar
1/4 tsp cardamom powder
2-3 strands of saffron
few pistachios and almonds to garnish.

Method:
1. Hang curd overnight.
2. Blend yogurt, banana apple pulp, sugar, cardamom to smooth mixture.
3. Garnish with saffron, pistachios and almonds.
